Smokery Springs is a traditional smokehouse. They hand fillet every side, cure longer with just salt, and hang smoke in their brick kilns for over 24 hours using only whole oak logs. Their products do not follow the usual method of processing, laying flat, and smoking smoked salmon in a machine that is commonly found in many places.
