Dipasquale chooses and promotes traditional sicilian cheeses. Dipasquale Formaggi only produces mature traditional cheeses from milk sourced from the leading farms in Ragusa and the province. Producers must pass severe quality checks in order to be considered for inclusion in our selection. Only the best cheeses make it through the careful ageing process, that takes place in the historic natural caverns of our warehouses. The continuous humidity rate and temperature control here allow the cheeses to develop organically, giving our goods the distinct flavour of Sicilian tradition.
