In Pignola, in Basilicata, tradition has it that friends, relatives and fellow villagers pour into the square to experience moments of joy and conviviality together. The owner of the party has always ... been him, the Caciocavallo Impiccato! I remember that we children enjoyed helping the grown-ups to set the fire until, once lit, the crowd began to shout in chorus: "Hang him, hang him ..." At that point the eldest of the group proceeded slowly towards the embers with in his hand a head of Caciocavallo ready for the gallows. Enchanted, I watched the cheese melt until it yielded to the old man's sharp blade, who with easy dexterity spread it on a slice of freshly toasted bread. The children, fortunately, were the first to have a slice. That flavor is unmatched in my memory. Now I live with my family in the most beautiful city in the world, Rome.More
